Ingredients
- 180 g flour
- 150g sugar
- 4 eggs
- 100 ml of milk
- 100 ml of oil
- 3 tablespoons cocoa
- 1/2 sachet baking powder
- a fresh pineapple about 1 kg
Cream:
- 250g mascarpone Delaco
- 250g caster sugar
- pineapple or vanilla essence
Instructions
- To prepare muffins one started with the 4 egg whites, which beat the whites with a pinch of salt and 1 tablespoon sugar. With remaining sugar beat egg yolks foam, to which we add the 3 tablespoons of cocoa, milk and oil.
- Also in composition incorporate yolks and flour we put in prior envelope baking powder 1/2.
- That done, add the whipped egg whites from yolks and mix composition until it will mix easy.
- Meanwhile, clean the pineapple and cut it into small cubes half and a half into slices very thin.
- Put pieces of paper shaped muffins, add composition enough to fill three-quarters pieces of paper, then put on each diced pineapple.
- We baked muffins sites and bake about 20 minutes at 180 degrees C in the preheated oven.
- From the composition above about 25 muffins out, this and depending on how large the pieces of paper used.
- To prepare the cream cheese, mascarpone foam beat together with the sugar until smooth and fluffy creamy and flavoured with pineapple or vanilla essence (to taste).
- Garnish with pineapple slices dehydrated, we obtain putting in the oven on low heat 25-30 minutes, sliced fresh pineapple.
- Put one roundabout pineapple muffins every form again and keep the oven at low heat until dry well and become crisp.
The recipe for muffins with fresh pineapple and mascarpone from Delaco is a delight for children but also for adults. Fruit muffins are delicious.
